Salmon with capers in puff pastry
Ingredients:
1 package puff pastry dough
200gr smoked salmon
2 medium tomatoes
capers
half a lemon
1 egg
black pepper
olive oil
preparation:
Unroll the puff pastry and season with ground black pepper, and in the center place the salmon. Season the salmon with pepper, half lemon juice and some capers, then cut the tomatoes into slices and place on top of the salmon with a little olive oil (you can also use a little salt to season, but note that the capers may have already salty) Roll the salmon with the puff pastry, placing one of the first dough portions and then the other over. Finally brush with egg yolk and a lemon peel zest. Bake at 200º for about half an hour, or until the pastry is golden coloured.
