Almond Cake with honey and olive oil
Ingredients:
200g granulated almond
1 egg
200 ml of honey or agave syrup
50 ml of olive oil
1 pinch of salt
1 tabele spoon of cinnamon
1 coffee spoon baking powder
4 drops of lemon juice
Preparation:
Begin by placing the granulated almond in the food processor in the grind mode but preventing it from becoming powder, to grind into small pieces.
Then separate the whites from the yolks. Whisk the remaining ingredients (except the lemon drops) with the egg yolks until it forms an homogeneous dough.
Whisk the egg whites with a pinch of salt and drops of lemon till they are meringue consistency and involve in the previous prepared. Take to the oven pre heated 180º for 40 minutes in a mould lined with greaseproof paper greased with the olive oil.
