Mange tout and prawns curry
2 table spoons coconut oil
1 large chopped onion
3 cloves of chopped garlic
1 dessert spoon of grated ginger
1 cup of peeled prawns
2 table spoons curry powder
1 roasted red pepper, pickled
1 large chopped carrot
200g mange tout
1 pack of cream
1/2 cup coconut milk
qs chopped coriander
Preparation:
Heat the coconut oil in a frying pan. Add the garlic and the onion and saute for 4-5 minutes until they golden brown.
Add the curry powder, mange tout, pieces of roasted peppers and the carrots.
Stir, involving all ingredients and cook them for 5-7 minutes.
Reduce the heat and add the prawns, ginger, coconut milk and cream. Mix well and simmer, but in low heat.
Remove from heat, sprinkle with chopped coriander and serve with white rice.
