Cream of celeriac, served with spiced tomato
Ingredients:
celeriac
onion
water
olive oil
garlic
herbs
lemon
chilli
Salt Flower
preparation:
Peel and cut the celeriac into pieces. Cover with water and cook covered, until it becomes tender. Turn into puree and, if necessary, strain it.
Prepare the spiced tomato as follows. Mince the onion, garlic and tomatoes and sauté them in olive oil over low heat. Add halfway through cooking chilli, open or full, according to taste. Season with salt, already off the heat, add the herbs to your taste, chopped, and the zest of a lemon. Serve the cream, adding the seasoned tomato.
