Organic Boxes with Recipes

"Organic Boxes with Recipes", is the result of a challenge launched by Hugo Mariano, from Salivitae, to Mercearia Bio.
In this first edition, Anabela Diogo prepared two appetizing recipes for us. In the "Basket 2 recipes, fruit and salad", you will find the ingredients to make these 2 recipes and also fresh fruits and salad ingredients.


"Cheer Up" Little Stew 
For 4 people. Stimulates circulation, activating energy and boosting immunity, in a combination of rich, tasty and satiating ingredients. Cooking time: 1/2 hour. Vegan. Without gluten
We need:
1 large carrot (or 2 small)
1 small onion
2 small sweet potatoes
1 mug of cooked Butter Beans and their cooking water
50 gr of Buckwheat dough Tubetti Dala Costa
200gr of smoked Tofu with Almond and Sesame
Thyme Leaves (2 stems)
1/2 sprig of parsley
1 teaspoon of turmeric
3cm of peeled ginger
2 tablespoons of Biodharma Apple Cider Vinegar
1/2 small heart cabbage
Olive oil, Salicornia and Salt q.s.


How to prepare?
Cut the carrot into slices, the sweet potatoes in cubes, the onion in half moons and the heart cabbage in squares.
In a pan drop 1 drizzle of olive oil, 1 teaspoon of turmeric and grate 3 cm of peeled ginger. Leave on a low heat to release the aromas. Add the carrot, potatoes and onion and envolve to allow the flavours to blend.
Add the water from the cooked beans, previously reserved, and add more water to the preparation if necessary, in a total of 1200ml of water. Bring to a boil and add the cooked butter beans, the smoked tofu cut into very small squares and two tablespoons of apple cider vinegar. Add a pinch of salt and cook for 5 minutes.
Add 50 g of buckwheat dough 1/2 bunch of chopped parsley and the leaves of two stems of thyme. Cook for 5 min.
Add the cut cabbage and wait 3 to 4 min.
Rectify the seasonings, add a little more chopped parsley and thyme leaves and serve with chopped salicornia.
NOTE: To cook the butter beans, we suggest soaking them for at least 8 hours. You can add 3 cm of Kombu seaweed to the soaking water to soften the effects of the leguminous plant o when it is cooking, you can discard that water and return to boiling water to continue cooking and thus make the most of the nutrients in the beans and use that water later in the stew.

"Heart Breaker" Balls
For 4 people. A green dish to open the heart. Cooking time: 1.5 hours. Vegan
We need:
For the Balls
1 mug of cooked butter beans
2 mugs full of spinach leaves
1 small onion
3 cloves of garlic
1 small grated carrot
3 tablespoons Provided whole oatmeal
1/2 bunch of parsley
1 teaspoon of turmeric
Black pepper ground (optional)
olive oil (to sauté and brush)
salt
To go with
1 stem of thyme
1 crushed garlic clove
200g of buckwheat dough Tubetti Dala Costa
salt q.b
1 drizzle of olive oil
Chopped Salicornia
For the Salad:
1 small red cabbage
1/2 small heart cabbage
1 apple
Apple cider vinegar q.s.
1 and 1/2 teaspoon of sea salt

How to prepare:
Remove the spinach leaves and soak them for 20 min., Discarding the water at the end.
While waiting, slice the red cabbage into julienne, add 1 shallow teaspoon of sea salt and knead it with your hands until the juices start to come out. Discard these juices and reserve for later. Perform the same procedure with the heart cabbage with the ratio: 1/2 heart cabbage to 1/2 teaspoon of sea salt.
Chop 1 small onion and 3 cloves of garlic and sauté in a drizzle of oil until they start to brown. Add the butter bean mug, the previously soaked spinach, the grated carrot, the teaspoon of turmeric, the ground black pepper (optional) and a pinch of salt. Leave on a low heat until the spinach decreases in size. Then add 3 tablespoons of whole oatmeal and mix well. Remove from heat and grind the mixture. If the mixture becomes too soft, add 1 more spoon of flour. Allow to cool slightly and shape small balls with your hands, placing them in a tray lined with parchment paper. Brush the balls with oil and place them in the preheated oven 200 degrees, with the top grill on until they are lightly toasted.

Cook the Buckwheat Pasta Tubetti Dala Costa according to the instructions, placing a stem of thyme, crushed garlic and a pinch of salt in the water. Drain the pasta at the end of cooking, season it with a drizzle of olive oil and wrap it with chopped salicornia.
Mix the two cabbages previously reserved in a bowl, cut into cubes an apple and add to the preparation. Season with apple cider vinegar q.s.
Serve and taste with love, mixing the different elements in the mouth for a greater sensory experience.
NOTE: To cook the butter beans, it is suggested to be soaked for at least 8 hours. Soaking the spinach allows us to obtain all the nutrients they offer and prevent oxalates - a substance present in spinach - from accumulating in our bodies.
