"egg bites" with tofu and sautéed vegetables

An easy to prepare recipe by Catarina, Pitada Aqui e Acolá - aqui


For 12 servings:

3 eggs
2 grated carrots
4 sprigs of broccoli
100gr of green beans
100gr of purple cabbage
100ml of vegetable milk (I used rice-côcô)
1 pack of tofu 250gr (mine was prepared with curry)
salt, pepper and nutmeg q.s.

Start by baking the green beans, broccoli and purple cabbage.
In a pan sauté the carrots in olive oil and garlic, and then add the cooked vegetables. Season with salt, pepper and nutmeg.
In another bowl, mash the tofu and add the eggs, salt and milk.
Add the vegetable preparation to the tofu and place the mix in appropriate moulds to bake at 200C for 15min.
