Cocoa Granola (vegan/without refined sugar/gluten-free/without nuts)
Ingredients:
1 cup gluten free oat
1 cup grated coconut
1 handful of raisins
1 handful sunflower seeds
2 tablespoons cocoa
1/2 cup of puffed rice
1 teaspoon cinnamon
1 pinch of salt
3 tablespoons coconut oil
4 to 5 rice jelly tablespoons
Preparation:
1. Preheat the oven to 150ºC.
2. Mix in a bowl the oats, coconut, raisins, seeds, salt, cocoa and cinnamon.
3. In a separate bowl mix the oil with the jelly and
then pour over the dry ingredients and mix well, so that everything is
well involved.
4. Line the baking tray with parchment paper, and
spread the granola in a way that you do not get a too thick layer. If
need to be, divide the granola into two oven trays to take to the oven
in separate timings. Bake for about 30 minutes. Stir the granola after
15 minutes for an even cooking.
Suggested use:
Mash a banana and mix with a natural vegetable yogurt.
Place this mixture in a jar or bowl, then put a layer of cocoa granola,
pear (or other fruit) and finish with a little granola. An easy
suggestion to bring in a lunch box for a snack or to take for breakfast.
