Breakfast Rice Pudding
Ingredients:
1lt skimmed milk
150g of bio ground grain starchy rice (arborio-like)
1 lemon (zest only)
2 cinnamon sticks
honey to taste
suggested toppings: nectarine, ground coconut, chopped pistachios, bee pollen
Preparation:
Place the milk, rice, lemon zest and cinnamon sticks in a pot and bring to a simmer without boiling for 50mins, constantly stirring. At the end of that time, remove the pot from the stove and add in the honey, stirring to incorporate. Let cool down and serve with your favourite toppings.
