sweet quinoa with coconut milk, banana and dates

Ingredients for 4 bowls:

one cup of quinoa (120 gr)

3 cups of vegetable drink (almond or other)

1 cinnamon stick

1 lemon zest

a pinch of salt

2 bananas from Madeira

6-8 dates

4 tablespoons coconut milk (creamy part)

qs cinnamon powder

a pinch of vanilla

qs honey, coconut sugar or maple syrup (optional)

decoration: laminated roast almonds, banana, dates, grated roasted coconut...

Preparation:

wash well the quinoa and let it dry on a strainer
- meanwhile warm up the almond drink with a cinnamon stick, the lemon zest and the salt. Beware so it does not spill...
- when it starts boiling add the quinoa, stir, put the lid on and lower the heat to the minimum.
-Process the bananas, the coconut milk and the dates (without seeds) in a food food processor or in a crusher till it becomes liquid.
- Stir lightly every now and then.
- when the vegetable drink has been absorved and it is practically cooked, mix carefully the cream obtained and add the vanilla.
- if you like it sweeter add a bit of honey or other natural sweetener. But bear in mind that the bananas and dates are already very sweet.
- remove from the heat and pour into the bowls.
- sprinkle with the cinnamon powder and decorate

serve while it is warm or leave it in the fridge for some time
