Moroccan harira soup

Ingredients:

250 gr lamb

2 table spoon olive oil

1 chopped onion

1 celery stalk

1 tea spoon cumin

1/4 tea spoon cinnamon

1/2 tea spoon curcuma

1/2 little chili

250 gr cooked chickpeas

250 gr cooked lentils

400 gr chopped tomatoes

1,7 lt hot water

fresh coriander leaves

salt

pepper

1 tea spoon fresh grated ginger

preparation:

In a large pot add the olive oil with the chopped onion and celery. Cook til the onion gets translucent.

Add in all the spices and stir well to make sure all the fragrances are released. Time to add the lamb, the chopped tomatoes and drained chickpeas and lentils. Salt and pepper and cover with the hot water. let it cook gently for 1 hour to 1 and 1/2.

Serve hot sprinkled with some fresh coriander.
