Quinoa, courgette, walnut and ricotta balls in the oven 

In rainy days you always feel like having those warmer and cosy dishes and nothing better than these bites you can eat even on the couch.

For that you need to cook the quinoa but keep in mind that it has to be thoroughly washed before and after cooking to clean as much as possible your saponin and phytate content (too much information? "Learning is never too much")

Grate 1 courgette and squeeze out its water.

Add salt, pepper qs (I over did it), paprika and chopped basil.

Add the nuts (to me, many are never too much) ️

 Add a few spoons of ricotta to taste (add as you go and feel the texture of the dough).

 Add one white of egg whisked in castle and mix everything very well.

Shape the balls and bake in the oven at 200C for 20min.
