chocolate mousse zero waste
Here's another Zero Waste recipe :)
The most skeptical will be amazed
when I say that this chocolate mousse was made with only 2 ingredients
and without EGGS OR SUGAR !!
Yeah, I feel completely at my beach when I can combine chemistry and biology with cooking
This
is a molecularly based recipe, where through the cooking water of beans
(yes, that's right) we can create a meringue (without adding sugars or
sweeteners).
So just need:
150mL Aquafaba (bean / grain cooking water that can be homemade or tin - does not really matter)
100 gr of chocolate (if you want a more bitter mousse use with 70% cocoa, if you want more sweetie use milk chocolate).
Preparation:
Whisk, for 5min, the Aquafaba until it is in merengue point.
Melt the chocolate in a bain marie and then incorporate in the meringue.
Refrigerate for 4h.
It's
so good, so good, so good that the skeptics here in the house ate
(without knowing what it was taking) and didn't even notice a difference
!!
Give it a try because it's really worth it and it's a MUCH healthier alternative (no eggs or sugar)!
