zero waste - butter

Two weeks ago a food store promoter gave me a taste of a new vegetable milk that had come out. It was almond, hazelnut, cashew, and walnut, and indeed it was very good but also excessively sweet.

To give you a notion, with that simple packet of milk (and other food sins we make during the day) it is easy to exceed the recommended daily sugar intake (I.e.

I took the opportunity and decided to recreate it at home.

To do this, overnight, I dumped 1 cup of nuts (the same ones used in the other milk, that I think looks better in the supermarket shelf ) in water and left in the refrigerator.

This morning I discarded this water (for the plants) and mashed the fruits with another 3 cups of water. I added a pebble of salt and a thin slice of organic date paste I bought at @ merceariabio.pt! (I.e.

As we have officialy entered the era of reducingour  food waste, this recipe recycles everything. "

I then strained the liquid and the dried fruits left overs will be used as flour for some cookies or wafers. All you have to do is to take this granulate to the oven, to dry it, to become a flour (and very rich that is).

Honestly the price of vegetable milk from supermarket and this, homemade, should be very similar. But the important thing here is the fact that it is much more natural, to be sure of what it contains and still reduce in sugar (which is our biggest enemy, the bacteria love it). (I.e.


And with the "flour" left over I made this nut butter (to reduce food waste):

To do this, I mashed for about 10 minutes, in a kitchen robot, the mixture that had previously been roasted. (I.e.

I added a pinch of salt and a teaspoon of cold-pressed coconut oil.

Keep in the refrigerator and use on toast, toasties, to spread chicken breasts ...
