Tabulé or Bulgur Tabbouleh

Ingredients:

1 cup bulgur + 3 cups water

3 medium chucha tomatoes

1 small cucumber

1 small red pepper

3 shallots

1 grated garlic

cherry tomato q.s.

parsley q.s.

chopped mint q.s.

1/2 medium lemon juice

"ground pepper

salt flower q.b.

garlic flavoured oilve oil (a generous amount, if you do not have such an olive oil use normal good quality olive oil, the olive oil flavour greatly influences this dish)

preparation:

1. Bake the bulgur: put the 3 cups of water and 1 cup of bulgur in a well covered pot, when it starts boling let it cook 10 to 15 min., then turn off the heat and leave it for 10 min. After that let it cool completely.

2. Cut tomatoes, cucumbers and peppers into small pieces and place them in a serving bowl.

3. Add the chopped shallots and the grated garlic.

4. After the bulgur has cooled down, mix the bulgur, season with the parsley and mint minced, lemon juice, pepper, salt flower, olive oil and mix it all well.
